Superfood Muffins, anyone?


Two months ago, I gave birth to the most amazing little guy! Good news? He was born happy and healthy! Bad news? I gained 40 pounds. While I have about 5 stubborn pounds to go to get back to my pre-pregnancy weight, I've stalled for the past 2 weeks with little progress. The weeks have been manageable for me. I can control my diet and exercise. However, now that I'm no longer home-bound and I'm ready to re-enter my old life, the weekends have become a major challenge to my diet and exercise regime. With brunch invites and cocktail parties, who can keep a diet? What's worse is that a small taste here and there of any prohibited food just makes me want it more. So, my sweet tooth has been reignited after a feast of a birthday brunch for a dear friend. It sent me all over the internet trying to find a sweet-ish morning delight to curb my craving for pancakes, french toast, doughnuts, bagels, and muffins.

Well, I found it! My favorite food blog, www.hungryhappens, had just the solution that I was looking for! And, it's seasonal, too! Thank you, Stella, for the most amazing pumpkin, nut butter muffins. She calls these superfood muffins because they are chock full of good stuff like chia seeds, nuts, dark chocolate and dried fruit.
